If you are using store brought yogurt, beat it for a few seconds and a little bit of water and mix it in. The store brought yogurt is very thick and hence you need to thin it a little bit. </span></li>
<li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">Heat the oil in a small pan. When it hot, add the mustard seeds. When they start spluttering, add the curry leaves. Put this tadka into the yogurt mixture.</span></li>

Add 3/4 cup milk and cook it in a pressure cooker. You may also use a microwave to cook this. Adjust the quantity of milk. </span></li>

Crush the cloves and remove the outer layer of the cardamom and put this in a mortar and pestle and crush into a powder. Add this to the carrot mixture. </span></li>

Soak it for 15-20 minutes. This makes them softer and reduces the cooking time. </span></li>
<li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">Heat the oil in the pot, add the garlic and the bay leaf, when the garlic paste starts turning golden color, add the onions and the bell pepper and cook till soft. </span></li>
<li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">Add the tomatoes and the carrot and cook until soft. Add the soaked lentils and cook for 3-4 mins. </span></li>
<li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">Add the wine, water and the broth. Season it with salt,pepper. Bring it to a boil. Leave for 2-3 minutes. </span></li>
</ul><ul><li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">Reduce the heat to a simmer and cook for 25-30 minutes or until the lentils are soft but not breaking apart.</span></li>

</ul><div><b><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">Method: </span></b></div></div><div><ul><li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">Cook the rice with all the spices and allow it to cool down </span></li>
<li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">Preheat oven to 350F . </span></li>
<li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">In a kadai /skillet, heat the oil and add the cumin , red chilli , peppercorns, elaichi, cloves and cook until the cumin is browned and the red chillies change their color. </span></li>
<li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">Add the curry leaves and they should make a splattering sound , add the turmeric and the coriander powder.</span></li>
<li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">To this add the onions and cook until translucent. Now add the mushrooms and salt. Cook until the mushrooms shrivel into small size. If you feel that the masalas are sticking to the skillet , add a few drops of water. </span></li>
<li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">Mix in the biryani powder and slowly add the buttermilk. Bring the mixture to a boil and cook until it is reduced to a saucy consistency. </span></li>
<li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">Turn off the heat and add the cilantro leaves to it. </span></li>
<li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">Mix in the cooked rice. </span></li>
<li><span class="Apple-style-span" style="font-family: 'Courier New', Courier, monospace;">Grease a dutch oven /casserole with butter and add the rice to it. Cover the casserole with aluminium foil. If your casserole does not have a lid, wrap twice with the foil. </span></li>

Add water to bring it to the desired consistency. Once the batter is fermented, do not keep it outside,refrigerate it. You can make dosa batter for a week and keep. </span></li>

Let it cool and make this into a paste and keep aside. </span></li>

Cook for few more minutes until the vegetables are thoroughly blended into the kurma. Add the garam masala and bring it to a boil.</span></li>
